Roasted Root Vegetables

4 med carrots, cubed 4 med parsnips, cubed 1 lb potatoes, cubed 1/3 c oil 2 tsp coriander 1½ tsp cardamom ¾ tsp pepper |
Preheat oven to 450°. Mix spices together. Toss vegetables with oil and spices. Spread evenly over baking sheet. Cook 30-45 minutes until vegetables are tender. |
