Chimichurri

3-4 cloves garlic, minced

½ c red wine vinegar

1 shallot, finely chopped

1 tsp salt

1 chili pepper, finely chopped, optional

½ c fresh cilantro and parsley, minced

2 Tbsp fresh oregano, minced

¾ c olive oil

 

 

Combine all ingredients in a blender, puree until smooth.
