White Bean Chicken Chili
Cooked chicken, shredded 5 cups chicken broth 1 med onion, diced 2 cans white beans 1 tsp cumin 1 tsp oregano 1 can chopped green chilis 2 cloves garlic, minced 1 ½ cup frozen corn 1 tsp cooking oil |
Saute onion in oil. Add garlic, oregano, and cumin. Cook 1 minute. Add broth and chilis. Bring to boil. Reduce heat and simmer uncovered for 10 minutes. Add beans (smash ¼ of beans to thicken). Cook 10 min. Add corn and shredded chicken. Cook 10 min. |
