Cream of Mushroom Soup

1 c mushrooms, sliced

2 Tbsp onion, chopped

2 Tbsp butter

2 Tbsp flour

2 c chicken broth

1 c whipping cream

¼ tsp nutmeg, optional

salt and pepper to taste

Cook mushrooms and onion in butter until tender, but not brown (5 min).  Blend in flour add chicken broth.   Cook, stirring constantly, until slightly thickened and bubbly.  Stir in whipping cream and seasonings.  Heat through.
