Clam Chowder

4 slices bacon

½ c onion, finely chopped

4 med potatoes, peeled, diced

1 Tbsp flour

2 cans minced clams(6 oz each), w/ juice

1 c bottled clam juice

1 c half and half

½ c whipping cream

2 Tbsp parsley, finely chopped

In large heavy saucepan of skillet, sauté bacon until brown and crisp. Remove and drain on paper towels, crumble. In same skillet, sauté chopped onion and potatoes for a couple of minutes. Sprinkle with flour. Add clam juice from cans and from bottle. Stir to combine. Bring to boil. Simmer, stirring from time to time, until potatoes are soft (15 min). Add half and half, clams, and cream. Heat until simmering DO NOT BOIL. Sprinkle with parsley and bacon.
