Corny Bean

1 -15 oz can of garbanzo beans

1 -15 oz can of small kidney beans

1 -15 oz can of black or pinto beans

1 c corn, cooked, cooled

½ red pepper, chopped

2 slices red onion, chopped

¼ c cilantro, chopped

 

6 Tbsp olive oil

2 Tbsp balsamic vinegar

1 tsp dijon mustard

Rinse beans, add chopped vegetables. Mix vinaigrette, pour over salad.

Let chill 1 hour
