Chile Rellenos

6 Anaheim chili peppers, seeded

8 oz cheese, cut into ¾ inch strips

2 large eggs, seperated

1 tsp baking powder

¾ c flour

oil for frying

Preheat oven to broil, broil peppers until skins are blackened and blistered. Rotate peppers to char all sides. Remove from oven and place in paper bag or other closed container. Let steam for 10-15 minutes. Remove skins and pat dry with paper. Stuff each pepper with cheese strips.

Whisk egg yolk and baking powder together. Beat egg whites until stiff peaks form. Gently fold whites into yolk mixture.

Put flour in shallow bowl. Heat oil in skillet over medium heat. Roll each stuffed pepper in flour and dip in egg mixture to coat all sides. Gently fry until golden brown and cheese is melted.
