Chilaquiles

1 medium onion, chopped

1 large can chopped tomatoes, (1 lb, 12 oz)

2 Tbsp oil

1 pkg lawry's mexican rice mix

6¼ oz tortilla chips

1 lb jack cheese, grated

½ c cheddar cheese, grated

1 c sour cream

½ c diced mild green chilies

Sauté onion in oil, add tomatoes, seasoning mix, green chilies, bring to boil.  Simmer uncovered 10-15 minutes.

In buttered shallow baking dish: arrange ½ each of the following in layers tortilla chips, sauce, jack cheese.  repeat layers.  Top with sour cream.  Bake uncovered at 325° for 30 minutes.  Sprinkle with cheddar cheese, bake 10 minutes.  Let stand 15 minutes before serving.
