Green Beans with Sesame Paste and Garlic

2½ lbs fresh green beans

½ tsp salt

6 Tbsp oil

8 - 9 cloves garlic, finely minced

2 tsp black mustard seeds

1 inch fresh ginger, peeled and grated

3 Tbsp ground roasted sesame seeds

4 Tbsp cilantro, chopped

1/8 tsp ground pepper

1/16 tsp cayenne pepper

1 Tbsp lemon juice

Trim beans, cut into 1 in. pieces. Bring a pot of water with salt to a boil, add beans and cook 4-5 minutes or until tender, crisp. Drain in colander, run cold water over beans.

Heat oil over medium heat. When very hot add mustard seeds. When mustard seeds begin to pop (just a couple minutes) add garlic and stir. When garlic is browned slightly add ginger and stir once. Add beans, ground sesame seeds, cilantro, black pepper, cayenne pepper, lemon juice and salt to taste. Turn heat to low and mix well. Serve when beans are heated through.
