Curry Sauce

2 lb onion, chopped

2 oz garlic, chopped

2 oz ginger, chopped

6 2/3 c water

1 tsp salt

1 can tomatoes

8 Tbsp oil

1 tsp tomato paste

1 tsp turmeric

1 tsp paprika

Blend garlic, ginger and 1 c water. Combine rest of water, puree, and onions with salt in large sauce pan. Bring to boil. Cover and simmer for 40-45 minute. Cool. Once cooled, blend until smooth. Make sure it is perfectly smooth. Blend tomatoes until smooth. Bring oil, spices, tomato paste and tomato puree to a boil. Turn down, cooking 10 minutes, stirring occasionally. Add onion mixture and bring to boil again. Turn down the heat enough keep the sauce at a simmer. You will notice at this stage that a froth rises to the surface of the sauce. This needs to be skimmed off. Keep simmering for 20-25 minutes stirring occasionally, to prevent sticking. Use immediately or cool and freeze.
