Fried Rice

2 eggs

2 tsp peanut oil

1½ c cooked rice

½ c cooked ham, chopped

½ c scallions, chopped

½ c frozen peas, defrosted

1 T soy sauce

Pepper, to taste


Add oil, heat wok on medium-high for 1 minute.  Add eggs, mix to scramble.  With the eggs only partially cooked, add rice, mixing to coat rice with moist egg.  Cook for 2 minutes, stirring by lifting rice to keep rice from clumping together. Add scallions and ham, stirring for another 3 minutes.  Add peas and soy sauce, heating through.  Season with pepper.
