Chinese Dumplings

Filling:

2 green onions, minced

1 stalk celery, minced

½ c chopped cilantro

½ lb salmon, finely chopped

2 Tbsp oyster sauce

1 tsp dry sherry

1 tsp Asian chili sauce

½ tsp sugar

round won-ton wrappers

 

Sauce:

1 c roasted red peppers

2 med tomatoes

4 garlic cloves

1 Tbsp fresh ginger

2 Tbsp white vinegar

2 Tbsp fish sauce

2 Tbsp brown sugar

1 tsp Asian chili sauce

Combine the first eight ingredients.  Place a small amount on won-ton wrapper and pinch top together.  Add a small amount of oil to the bottom of a 12" non-stick sauté pan.  Immediately add dumplings, frying for a couple minutes.

 

Combine all ingredients for sauce and purée.  Bring sauce to a simmer over medium heat.

 

Add sauce to dumplings, cover and steam for a few minutes over medium heat.
