Spinach Feta Filo Roll
olive oil 1 bunch spinach, washed, trimmed, chopped 8 green onions, finely chopped 12 oz feta cheese, crumbled 2 eggs ¼ c parmesan cheese, grated ¼ c dill, chopped ½ tsp nutmeg 12 sheets filo dough |
Heat olive oil in large skillet. Saute onion and spinach until just wilted. Drain, and cool. Squeeze as much moist out as possible. Mix together lightly beaten eggs, cheeses, seasonings, and vegetables. Season with pepper. Grease a pizza pan. Preheat oven to 375° oven. Cover filo with damp towel and working with 1 sheet at a time, lightly brush with oil, fold in half lengthways and brush again. Place 3 tablespoons of the filling along one long edge, fold in the sides and roll up firmly. Form the roll in a coil in center of pizza pan, brush again with oil. Repeat with remaining ingredients. Arrange the coils in a single layer. Sprinkle with nutmeg (optional) and bake for 40 minutes. |
