Quiche

1 9" pie crust

1½ lbs spinach, washed, trimmed, chopped

½ onion, chopped

½ c swiss cheese, grated

¾ c cream

¼ c milk

2 eggs

 Bake pie crust at 375° for 15 minutes. 

Saute onion (or other choice of vegetables) until golden.  Add spinach toss until wilted.  Salt to taste.

Place saute veggies (and meat - optional) in prebaked crust.  Sprinkle cheese over veggies. 

Whip cream, milk, and eggs together.  Pour over cheese in crust.

Bake for 30 minutes or until set and browned on top.
