Jambalaya

Traditional Cajun

1 lb chicken breast, cut into bite sized pieces

1 lb smoked turkey sausage, cut into bite sized pieces

2 med tomatoes, chopped (about a cup)

1 c onions, finely chopped

½ c green pepper, finely chopped

½ c celery, finely chopped

0-¾ c chicken broth, depends

¼ tsp thyme

¼ tsp oregano

¼ tsp cayenne

2 c hot cooked rice

¼ c green onion, finely chopped

2 Tbsp fresh parsley, finely chopped

Spray pan with cooking spray, brown chicken and sausage - 10 minutes. Add onion, green pepper, tomatoes and celery, sauté 15 min. Add broth and spices – cover and simmer 15 min. Remove from heat add rice, parsley and green onion, cover and let stand 5 minutes before serving.
