Chicken Satay Burghers
1¼ lb ground chicken 4 scallions, minced ¼ c cilantro, minced ¼ c peanut butter 2 tsp lemon zest 2 Tbsp lemon juice 1 Tbsp pickled jalapeno pepper, minced salt and pepper |
Warm peanut butter until liquidy. Mix all ingredients together. Form into meatballs. Cook 5 minutes, turn and cook another 7-8 minutes. Serve with Bibb lettuce. |
