Penne w/ broccoli, sausage, and roasted peppers

4 oz Italian sausage, casing removed

1 lb dry pasta, penne or ziti

9 cloves garlic, minced

1 c roasted red peppers, cubed

2 lb broccoli, cut into bite size pieces

1 Tbsp olive oil

salt and pepper

1 c parmesan cheese, grated

Bring 4 quarts water to boil.  Add pasta, cook until al dente.  Drain and return to pot.  While pasta is cooking, brown sausage, breaking into small pieces.  Add garlic, roasted peppers, cook 2 minutes.  Increase heat to high add broccoli and ½ cup water, cover and cook until broccoli begins to turn bright green (1-2 min).  Uncover, cook until water has evaporated and broccoli is tender.  Add broccoli mixture, oil, and cheese to pasta, toss to combine.
