Shrimp, Basil, and Red Pepper Sauce


1 lb. shrimp, medium - large, peeled deveined

2 cups basil leaves

1 red bell pepper

1 fresno chili

6 garlic cloves

2-3 tbl sugar

2 tbl fish sauce

Lime wedges for serving

Marinate shrimp: Blend peppers, garlic, sugar, fish sauce and 3 tbl oil in a blender until smooth. Place shrimp in a bowl, salt the shrimp, cover with marinade to coat (reserve leftover marinade). Let shrimp and marinade sit for 10 minutes.

Cook Shrimp: Heat 1 tbl oil in a non stick skillet or well oiled wok over medium high. Once oil is hot add shrimp, working in batches if needed, and cook, turning once until lightly charred around the edges, about 1 minute per side.

Sauce: Reduce any leftover marinade.

Serve: Toss shrimp with basil and reduced marinade. Serve with lime wedges and rice (optional).
