Stuffed Peppers
6 lg peppers, either red or green 1 lb ground meat, either hamburger or sausage 2 Tbsp onion, minced 1/8 tsp garlic salt 1 c cooked rice or barley 1 lg can tomato sauce ¾ c mozzarella cheese, grated |
Cut peppers in half, remove stems, seeds, and membranes. Cook peppers in boiling water for 5 minutes or in a microwave until hot. Brown ground meat and onions in skillet season with garlic salt and pepper. Drain meat. Stir in rice and 1 cup tomato sauce, heat through. Stuff each pepper with mixture. Place peppers in ungreased casserole. Pour remaining tomato sauce over peppers. Cover and cook at 350 for 45 minutes. uncover, sprinkle with cheese and cook another 10 minutes. |
