Plum Torte
12 plumbs, halved and pitted 2 eggs 3/4 c. sugar ½ c unsalted butter, softened 1 c. flour 1 tsp. baking powder ¼ tsp. ground cardamom, optional) 1 lemon |
Heat oven to 350 F. Mix sugar, lemon zest, and cardamom in bowl. Cream with butter. Add four, baking powder, salt and eggs and beat well. Spoon batter into a spingform pan (8, 9, or 10”) lined with parchment paper. The batter amy not fill the pan. that’s OK! Place the plum halves skin side up on top of the batter. Sprinkle lightly with sugar and lemon juice, depending on the sweetness of the fruit. Bake 35 min to 1 hr. Remove and cool. Serve plain or with whipped cream. |
