Peanut Brittle

3 c sugar

1 c water

1¼ c white karo syrup

3 c raw peanuts

2 Tbsp butter

½ tsp salt

1 tsp vanilla

1 tsp soda

Mix first 3 ingredients together, bring to boil over medium heat.  Cook to 236° stirring constantly.  Add peanuts and continue cooking to 295°.  Stirring constantly. Remove from heat add butter, stir until melted.  Have last 3 ingredients mixed together and add after butter has melted.  The brittle might foam up.  Pour on a oiled slab.  Leave a few minutes and flip over.  If no slab just oil pan very good.  Stretch brittle thin in the pan, using white cotton gloves, or 2 well buttered spoons.  Cool fast, break from pan when cool.
