Quinoa Bars

2/3 c brown sugar

¼ c butter

2 eggs

1 tsp vanilla

¾ c crunchy almond butter

¾ c quinoa, ground

1 tsp baking powder

1 c chocolate chips

Line a 8" square pan with parchment paper, grease with cooking spray. Grind quinoa in coffee grinder (coarser ground will make cruncher bars).  Cream sugar and butter, add beaten eggs, almond butter and vanilla, mix well.  Add quinoa and baking powder, mix.  Finally add chocolate chips.

 

Bake 350° for 30 minutes. Cut while warm
