Rhubarb Cake

Grandma Janette

1½ c brown sugar

1 c oil

1 c buttermilk

1¾ tsp cinnamon

1 tsp soda

¼ tsp cloves

1 tsp vanilla

1 egg

2½ c flour

2 c rhubarb, chopped

½ c nuts (optional)

1 Tbsp butter

½ c brown sugar

Mix together brown sugar, oil, and buttermilk. Add 1 tsp cinnamon, soda, vanilla, egg, and flour. Mix well. Add rhubarb. Spoon into greased cake pan. Combine butter, ½ c brown sugar, nuts, and remaining cinnamon. Mix until crumbly.  Sprinkle evenly on top of batter. 

Bake at 350° for 70 minutes. Cool completely. Store wrapped in the refrigerator.
