Pound Cake

2 c butter

2 c sugar

9 eggs, separated

1 tsp vanilla

½ tsp mace

2 Tbsp brandy

4 c cake flour

½ tsp cream of tartar

½ tsp salt

Cream butter, slowly add sugar. Beat in one egg yolk at a time. Add vanilla, mace, and brandy. Sift flour, cream of tartar, salt. Add sifted ingredients slowly at slowest speed. Mixing only until thoroughly blended. Whip egg whites in separate bowl until stiff, but not dry. Then fold into batter. Pour batter into 2 greased loaf pans, lined with paper.

Bake at 350° for 45 minutes or until toothpick comes out clean.
