Finnish Lettu Flat Bread

Gluten Free

2 eggs

1 2/3 c milk

½ c tapioca flour

½ c potato starch

½ c white rice flour

½ tsp salt

2 Tbsp sugar

Beat eggs in bowl, add rest of ingredients.  Let rest for 20 minutes.  Put 1/2 cup mixture on 350 degree lefse griddle or other flat pan.  Flip when golden brown on bottom.
