Oat Pancakes

1¼ c flour

¾ c quick oats

1/3 c chopped dates

¼ c chopped walnuts

2 tsp baking powder

½ tsp baking soda

½ tsp cinnamon

1 2/3 c buttermilk

¼ c packed brown sugar

¼ c butter, melted

½ tsp vanilla

2 large egg

Heat griddle.

Combine dry ingredients in a large bowl. (flour, oats, dates, nuts, powder, soda, cinnamon)

Whisk eggs, buttermilk and brown sugar in medium bowl until blended.  Whisk in butter and vanilla. 

Stir egg mixture into flour mixture until just combined.
