Kalamata Olive Bread
liquid from olive jar warm water 3 tsp dry active yeast 1½ c light rye flour 2½-3 c flour 1 tsp salt 1 Tbsp rosemary 1 Tb olive oil 6 oz. jar Kalamata olives |
Add enough warm water to olive joice to equal 1 cup total liquid. Place all ingredients in bread machine, select dough setting, press start. Check dough to see if it forms a nice elastic ball. If you think the dough is too moist add more flour. At the end of the cycle place on a baking sheet dusted with cornmeal, cover with plastic wrap, let rise in a warm location for 20 minutes. Preheat oven to 400°. After dough has risen, slash with a very sharp knife making three ½ inch deep diagonal slashes. Brush the top with cold water and bake for 20-25 minutes, or until nicely brown. |
