Fresh Rolls

2 ounces rice vermicelli, prepared according to package

8 rice wrappers, (8.5 inch diameter)

1 1/3 Tbsp fresh Thai basil, chopped

3 Tbsp fresh mint leaves, chopped

3 Tbsp fresh cilantro, chopped

2 leaves lettuce, chopped

1 carrot, grated

½ cucumber, slivered

2 green onions, slivered

Slightly, soften rice wrapper in hot water, place on plate for easier handling. Place 1/8 of all ingredients on wrapper, fold ends over ingredients, and roll to enclose ingredients. The traditional recipe calls for cooked shrimp, 2 per roll, cut in half. I use ground cooked pork or chicken for protein. Serve with : dipping sauce
